Method

1

Prepare the Chocolate Sponge

Whisk eggs and sugar until light and voluminous. Fold in flour and cocoa powder carefully to retain air. Bake and cool completely.

2

Cut Sponge Layers

Trim the sponge into even layers that fit neatly inside your cake ring or entremet mold.

3

Prepare Chocolate Ganache

Heat cream until steaming and pour over chopped dark chocolate. Allow to sit briefly before stirring until smooth and glossy.

4

Make Chocolate Mousse

Fold whipped cream into cooled ganache in stages to create a light and airy mousse.

5

Prepare Cake Ring

Line the cake ring with acetate sheets for smooth edges and easier unmolding.

6

Begin Assembly

Place the first sponge layer into the ring and spread a layer of chocolate mousse evenly on top.

7

Build Additional Layers

Continue alternating sponge and mousse until the mold is filled. Smooth the surface carefully.

8

Freeze the Cake

Freeze the assembled entremet for at least 4–6 hours or overnight until completely firm.

9

Prepare Mirror Glaze

Cook sugar, water, condensed milk, and gelatin before mixing with chocolate. Blend until smooth and allow the glaze to cool to pouring temperature.

10

Unmold the Cake

Remove the frozen cake from the ring and place it on a wire rack over a tray.

11

Apply Mirror Glaze

Pour the glaze over the frozen cake in one continuous motion, ensuring complete coverage.

12

Decorate

Finish with chocolate curls, gold leaf, cocoa nibs, or elegant chocolate decorations.

13

Thaw Before Serving

Refrigerate for 4–5 hours before serving to allow the mousse layers to soften.
